Caso contr\u00e1rio, afetar\u00e1 o efeito gel da prote\u00edna.<\/li><li>N\u00e3o haver\u00e1 <a href=\"https:\/\/en.wikipedia.org\/wiki\/Antibiotic\" target=\"_blank\" rel=\"noopener\">antibi\u00f3tico<\/a> res\u00edduos.<\/li><li>Acidez \u2264 18\u00b0T.<\/li><\/ul>    <h3 class=\"wp-block-heading\">As principais mat\u00e9rias-primas para a produ\u00e7\u00e3o de iogurte<\/h3>    <ol class=\"wp-block-list\"><li>Materiais de a\u00e7\u00facar e frutas<br>5-8% de sacarose ou glicose \u00e9 frequentemente adicionado na produ\u00e7\u00e3o de leite azedo.<\/li><li>Leite em p\u00f3 desnatado<br>Requisitos: alta qualidade, sem antibi\u00f3ticos e conservantes.<br>Objetivo: Aumentar o teor de mat\u00e9ria seca; melhorar o estado do tecido do produto; para promover a produ\u00e7\u00e3o de \u00e1cido pelas bact\u00e9rias do \u00e1cido l\u00e1ctico. Quantidade de adi\u00e7\u00e3o geral: 1-1,5%<\/li><\/ol>    <h3 class=\"wp-block-heading\">Concentra\u00e7\u00e3o<\/h3>    <p>Objetivo: Aumentar o teor de s\u00f3lidos e promover a coagula\u00e7\u00e3o da fermenta\u00e7\u00e3o. <\/p>    <p>M\u00e9todo: Concentra\u00e7\u00e3o sob press\u00e3o reduzida<\/p>    <h3 class=\"wp-block-heading\">Pr\u00e9-aquecimento e homogeneiza\u00e7\u00e3o<\/h3>    <p>Finalidade de pr\u00e9-aquecimento: para melhorar o efeito de homogeneiza\u00e7\u00e3o. 55-60 graus. Finalidade da homogeneiza\u00e7\u00e3o: manter a estabilidade da mistura. Condi\u00e7\u00f5es de homogeneiza\u00e7\u00e3o: 15-20 MP.<\/p>    <h3 class=\"wp-block-heading\">Esteriliza\u00e7\u00e3o e resfriamento<\/h3>    <p>A esteriliza\u00e7\u00e3o visa matar todas as bact\u00e9rias patog\u00eanicas do leite cru, bem como a maioria das bact\u00e9rias diversas.
